Vegetarian Bulgur & Feta Cheese Aubergine Involtini
Do you like the Mediterranean cuisine? The vegetarian bulgur wheat & feta cheese aubergine involtini are really easy to prepare, ready in no time and they make a most exquisite light lunch, dinner or party dish. I recommend using goat feta cheese as the taste of it blends perfectly with the flavors of all the other ingredients.
What are involtini, you may ask yourself? Involtini is an Italian word for various small bites of food consisting of some sort of outer layer wrapped around a filling and they can be made with a wrapper of meat, seafood, poultry or vegetables, with different fillings.
INGREDIENTS
- 2 large aubergines, sliced lengthwise
- 2 tbsp olive oil
- 150g bulgur wheat
- 8-10 sundried tomatoes
- chopped fresh parsley
- chopped fresh basil
- 2 tbsp toasted pine nuts
- 150g feta cheese
- sundried tomato paste
- olive oil
- salt and pepper
PREPARATION
Start this recipe by either grilling or frying the aubergine slices in a griddle pan with the olive oil for 2-3 minutes on each side until brown. Place onto a backing tray and continue cooking them in the oven for another 6-8 minutes.
Cook the bulgur wheat in a pan with boiling water for 10 minutes. When ready, place it in a large bowl. Add in the chopped sundried tomatoes, parsley, basil,pine nuts and 100g of the feta cheese crumbled. Season well with salt and pepper to taste. Mix together well.
Pull the dish together by laying aubergine slices onto a chopping board or other surface. Spread a little sundried tomato paste onto each aubergine slice. Spoon over the filling and roll up tightly. Repeat the process with all the aubergine slices. If slices are short, keep them in place by fixing them with a short skewer.
To serve, place the involtini side by side on a serving plate, top with some crumbled feta cheese and drizzle some olive oil.
